Corned beef hash and "perfect" egg

I made this for the family this morning.  We made corned beef, cabbage and carrots in the crockpot and it was slow cooking all night long (contributing to some crazy corned beef dreams, all night long).  Anyway, this morning I fried up some potatoes in olive oil, added some onion and garlic and then the corned beef.  The egg is from one of our Araucana hens (she lays green-shelled eggs).  The egg is cooked sunny side up in the pan and just when the white starts to firm up and bubble a little bit, I add a little bit of water in the pan and cover it.  So, it's like a combination between poached and sunny-side up and it's our favorite.  Basically, I guess it's like an over-medium sunny-side-up egg.  Happy New Year!
