Mixed up Breakfast

Ya know, sometimes you take a chance and it works out. This was the day (or maybe two) after New Years and I was trying to make some breakfast. We didn't have any potatoes but we did have some leftover homemade corned beef hash from the day before and we also had some leftover black-eyed peas (it's a southern thing). There was also a tiny bit of Spam leftover from my attempt to reacquaint myself with Spam. So, I basically fried the whole deal together creating some sort of mutant corned beef and Spam peas, then I cooked some of our fresh eggs (we have five hens in the backyard) just the way we like em and topped it off. But, it still needed a little something. Yup, a little bit of Pickapeppa sauce and we were off and running.

That looks plenty tasty to me! I would have never thought to use the Black-eyed peas.
