Corned Beef Hash with Perfect Over Easy Egg
We recently took a little vacation up to Ocean Park, Washington to spend some time on the beach. As we were driving into town (after a pretty grueling two days of long drives) my wife remarked that it was a bummer that she forgot her knitting needles and yarn. See, she's addicted to knitting. Anyway, literally seconds later we drove into the right by a tiny cafe that was located inside of a Knitting Shop, of all things. It actually freaked me out a little bit because it was just too much synchronicity.
So, of course we had to eat breakfast at the cafe so Mama could get her shopping on. She actually got some really rad knitting needles that had dice on the ends. I was ready to take one for the team, in that I didn't expect the breakfast to be out of this world. Boy was I wrong. My oldest son (who is 5) actually got the dungeoness crab quiche and scarfed it down. I (having literally stuffed myself full of crab the day before) decided to go for corned beef hash. It's usually a safe bet that if the corned beef hash doesn't come out of a can, it's going to be awesome. Because folks usually only attempt it from scratch if they can really pull it off. Did they ever!
Also, ever since we got our own laying hens in the backyard, I'm a bit of a nazi about eggs. They have to be cooked just how I ask for them to be. I figure it's not that tall of an order, especially considering that I can pull it off and I don't have any culinary skills to speak of. Well, as you can probably tell from this picture. They freaking nailed the eggs! So, if you are in Ocean Park, WA, and you are looking for knitting supplies or awesome food (or hopefully both) you should check this place out.
