Grilled fresh yellowtail tacos

I was going to make flank steak tacos, but since the grocery store only had mega packs of flank steak, my wife bought skirt steak... We went to Ft. Collins for the day, and after buying some pants, we went to Wilbur's Total Beverage to buy beer we can't get in Wyoming. Wilbur's happens to be next door to a Whole Foods, so we stopped in for a beverage, and I had the good fortune to check out the fish selection, where they had this awesome looking fresh wild yellowtail. It brought to light that the skirt steak marinading at home was low grade dog food.
Salsa is roasted (on the charcoal grill) red bell pepper, corn on the cob, pasilla pepper, green onion, black beans, vinegar, and salt. And pepper.
Yellowtail went on the grill long enough to scare it...
Homemade corn tortillas to wrap it all up. If you don't have a tortilla press, you need one...
Washed it down with a Belikan, which is a damn tasty beer, apparently.

Editor's Note: I think I had a freaking dream about this last night, after seeing the picture. The sear on that yellowtail is perfect! Nice work! I think you are right, though, I apparently need a tortilla press.

I can attest that these were the bee’s knees. And the Belikin put the whole meal over the top. Nom nom.

You guys keep talking about these Belikins and I’m going to have to take a road trip. I had a decent beer yesterday, though. Beltian White. It’s like a Montana take on a Belgian White beer. Only, it’s made in Belt, Montana. Get it? Yeah, we are witty in MT.
