Beet Salad with Jicama, Goat Cheese and Arugala

My sister-in-law got this amazing salad at a beachfront restaurant in Mexico.
Oven roasted beet salad, warm nut crusted goat cheese, arugula and jicama, champagne dressing.

Editor's Note: This is my favorite picture of the last few weeks, I think. You can ask my wife about me and beets. I'm a freak for beets... long story short. I think the real moral of this story, though, is that Ben and his wife really know how to travel.... and eat.
